Jerk Chicken with Rice & Peas done properly with bold flavour.
Ingredients
- 4 chicken thighs
- 2 tbsp jerk seasoning
- 1 tbsp oil
- 1 can kidney beans
- 1 cup rice
- 1 can coconut milk
- 2 spring onions
- 1 garlic clove
- Salt
Instructions
- Rub chicken with jerk seasoning and oil and marinate at least 30 minutes.
- Cook at 200°C for 35–40 minutes until charred and cooked through.
- Rinse rice and cook with coconut milk, garlic, salt, and water.
- Add kidney beans halfway through cooking.
- Fluff rice and mix through sliced spring onions.
- Serve chicken over rice.
