Jerk Chicken with Rice & Peas done properly with bold flavour.

Ingredients

  • 4 chicken thighs
  • 2 tbsp jerk seasoning
  • 1 tbsp oil
  • 1 can kidney beans
  • 1 cup rice
  • 1 can coconut milk
  • 2 spring onions
  • 1 garlic clove
  • Salt

Instructions

  1. Rub chicken with jerk seasoning and oil and marinate at least 30 minutes.
  2. Cook at 200°C for 35–40 minutes until charred and cooked through.
  3. Rinse rice and cook with coconut milk, garlic, salt, and water.
  4. Add kidney beans halfway through cooking.
  5. Fluff rice and mix through sliced spring onions.
  6. Serve chicken over rice.
