Caribbean Curry Chicken done properly with bold flavour.

Ingredients

  • 500g chicken
  • 2 tbsp Caribbean curry powder
  • 1 onion
  • 2 potatoes
  • 2 garlic cloves
  • 1 tbsp oil
  • 400ml stock

Instructions

  1. Heat oil and toast curry powder.
  2. Add onion and garlic and cook until soft.
  3. Add chicken and brown lightly.
  4. Add potatoes and stock and simmer.
  5. Cook covered for 25–30 minutes.
  6. Serve with rice.
