About this recipe
Caribbean Curry Chicken done properly with bold flavour.
Ingredients
- 500g chicken
- 2 tbsp Caribbean curry powder
- 1 onion
- 2 potatoes
- 2 garlic cloves
- 1 tbsp oil
- 400ml stock
Instructions
- Heat oil and toast curry powder.
- Add onion and garlic and cook until soft.
- Add chicken and brown lightly.
- Add potatoes and stock and simmer.
- Cook covered for 25–30 minutes.
- Serve with rice.
